Sample a selection of wines aged in the 17th-century cellars of a monastery after a fascinating tour of the winery. Situated in a protected reserve at the foot of the Montsant mountain range, the Cellers Scala Dei is an ideal high-altitude setting for cultivating grapes, the majority of which are Grenache. They are harvested by hand, analyzed for peak ripeness and processed in a manner that ensures that the resulting wines are organic and vegan. The winery is so environmentally conscious that to reduce its CO2 emissions, it uses lighter thinner wine bottles so less fuel is needed to transport them. The wines for your tasting may include a white blend of Grenache and Chenin Blanc, a delicate fruity rosé and a red made entirely with Grenache grapes from a vineyard that the monks planted centuries ago. An equally inspiring lunch follows at the nearby restaurant Clos Figueras.
