    OVERVIEW
Enjoy an inspired wine tasting and gourmet lunch at a winery restaurant in the Guadalupe Valley, a fertile area known as the Napa of Mexico, in part because the vast majority of Mexico’s wines are produced there. During the drive inland, you will notice the terrain becoming hillier with an abundance of sprawling farms and idyllic valleys such as Guadalupe. Its microclimate is similar to that in the Mediterranean as the summers are relatively cool with constant ocean breezes. Red wine grapes in particular flourish there, and over the past three decades or so, more than 150 wineries have become established along the valley’s wine route. Your introduction to one of the premier wineries will begin with an enlightening, behind-the-scenes tour. Afterwards, you will sample a wide selection of characteristic wines that beautifully represent the Guadalupe Valley. They will be paired with cheeses, chocolates and marmalades, which will perfectly complement the fabulous 3-course lunch that follows.

    HIGHLIGHTS
    • Enjoy a spectacular scenic drive through the Guadalupe Valley, the Napa of Mexico.
    • Gain an understanding of the valley’s terroir by touring a premier winery.
    • Sample several representative Guadalupe Valley wines and enjoy a gourmet 3-course lunch.

    Melissani & Drogarati Cave

Behold the natural attractions of Cephalonia, including those beneath the surface, such as the Drogarati Cave and subterranean Melissani Lake.

Departing from the pier, you'll drive toward the eastern shore of Cephalonia, the largest Ionian island. Arriving at the Drogarati Cave, you'll descend a flight of stairs into a large cavern which is lighted for dramatic effect. Stalactites hang from the ceiling like jagged curtains, and ancient stalagmites reach up from the rocky floor. The colors are predominately red, orange, yellow and white, from the iron content in the rock and the layers of chalk and limestone.

Although estimated to be 100 million years old, the cave wasn't discovered until about 300 years ago when a violent earthquake opened an entrance. Inside the cave's Chamber of Exaltation, the acoustics are considered near perfect, and concert events are often held in its voluminous interior. Even the famed opera soprano, Maria Callas, sang here.

Continuing on, you will travel in a northerly direction, passing the town of Sami en route to the renowned Melissani Lake. This underground phenomenon looks absolutely magical in the shafts of light that come from 100 feet above, where parts of the ceiling collapsed decades ago. You'll enter the lake by small boat, paddled in so it hardly disturbs the surface of the water, which is a brackish mix of saltwater from the Ionian Sea and freshwater that originated back in Argostoli and then flowed across the island. The stalactites hanging from the ceiling here are estimated to be at least 20,000 years old.

Afterwards, you'll return to Argostoli via a picturesque coastal route that offers spectacular views across the strait to the island of Ithaca, and further along, Myrtos and its dramatic, sheer white cliffs.

Spend time at a traditional goat farm in the Malaga province, learning how regional cheeses are made from goat’s milk and then sample a selection of them with sausages and wine. Near the white-washed village of Casares in the shadow of Sierra Crestellina, you will visit a family-owned farm that raises goats for their milk, which is primarily used to make cheese. You will learn the process step by step and the variations that make the different cheeses. You will see how the goats are milked, how the milk is ripened with cultures and induced to form a thick curd by adding the natural enzyme rennet. In time, the watery whey will be drained off to make ricotta cheese, and the curds will be pressed into cheese molds. You will then taste a selection of cheeses made months earlier. The younger cheeses are typically creamier, while the more mature cheeses tend to be firmer and more pungent.

    HIGHLIGHTS:
    • Gain a thorough understanding of how regional cheeses are made at a family farm.
    • Watch the process step by step, which will make the tasting that follows more relevant.
    • Taste the difference between younger cheeses and more matures ones, while sipping wine.

Meander through the enchanted Botanic Gardens in the "Rose City" of Timaru and then discover the impressive Kiwi creativity at the Aigantighe Gallery and statue of Phar Lap.

Boarding your coach at the pier, it's a brief yet scenic drive to the Botanic Gardens, where you'll be free to wander about the spectacular rose gardens, duck ponds and aviary under a canopy of mature trees. It's a wonderfully serene setting, where you may view some of New Zealand's endangered plants and perhaps learn how locally grown herbs and spices are used.

From here, it's a picturesque drive past Timaru's verdant Centennial Park and historic district and on to the esteemed Aigantighe Art Museum. Founded in 1956 by a Scottish family, Aigantighe (pronounced "egg and tie") contains one of the South Island's largest art collections, dating from the 16th century to the present day. Even the museum, housed in a 1908 mansion, is a work of art, as is its surrounding sculpture garden.

Continuing on, you'll next stop at a sculpture of great national pride dedicated to Phar Lap, a thoroughbred racehorse born in 1926 near Timaru. Affectionately known as "Big Red" because of the color of his coat, Phar Lap recorded an amazing 37 wins out of 51 starts, becoming one of the greatest world champions. The statue of the famed racehorse in full gallop is revered as a symbol of perseverance and excellence.

Returning to the pier, you'll drive along the lively Caroline bay beachfront and see the historic Landing Service building that was originally was used for the unloading of ships around the 1870s. Today, it is the only remaining building of its kind in Australasia.

Experience Bruges like a local by exploring areas off the beaten path but still in the shadow of landmarks such as Kruispoort. Although you will stop at this 15th-century gate, the sites that lie ahead will reveal a lesser-known but not less spectacular side of Bruges. You will see windmills along medieval ramparts, follow atmospheric lanes through residential neighborhoods and pause at the bridges and inner canals that gave Bruges its nickname, the Venice of the North. Upon arriving in St. Anne’s, you will behold the Jerusalem Chapel, which was designed to mirror the Church of the Holy Sepulchre in Jerusalem. By the 16th century, Bruges had become a textile center for woven lace, and you will observe a demonstration of this artisan trade that continues to flourish. Another way to become immersed in local life is at the Markt, a sprawling square that has been a marketplace for more than 1,000 years.

    HIGHLIGHTS:
    • Explore atmospheric areas of Bruges that are typically unknown to all but the locals.
    • Cross landmark canals that gave Bruges its nickname, the Venice of the North.

A ferry will take you to the Waterland, where you will begin pedaling at a leisurely pace well suited to the area’s laid-back ambiance. You can expect to see farmers going about their daily lives, brightly painted wooden houses and an impossibly green countryside crisscrossed with canals and dotted with seemingly endless rivers and lakes. Almost half of the Waterland is water, held in check by a series of dikes, and the landscape couldn’t be more beautiful. Expect to pass cows grazing in fields, iconic windmills pumping water out of the lowlands and a number of seaside villages, one of which you will stop in for a drink.
